50% whole bunch pressed and fermented in stainless-steel to 13.4% alc. and 8.7 h/L rs. The wine spent three months on lees. Very pale straw-yellow with green hues to the colour, this has a bouquet of white stonefruits along with nuances of pears and distinct yeasty-nutty lees notes. Dryish on the palate, the fruit flavours of mineral and steel-like stonefruits is shy, allowing the nutty, yeasty lees characters to show through. Crisp acidity is well-countered by proper textures.
