Bright straw-yellow colour with slight green hues, pale on edge. The nose is fresh with light and elegantly presented, cool-spectrum aromas of cut grass and gooseberries with nettle-likeand pea-pod notes. This is clean and pure with a steely, minerally edge. Dry to taste, this is medium-bodied and slender, with tightly bound, restrained and uncomplicated flavours of gooseberries, grass and nettles. The mouthfeel is crisp and refreshing with bright acidity. As the wine flows, some fruit richness unfolds and fine textures emerge, carrying the wine to a dry, grainy and moderately concentrated finish. This is an elegant and slender, cool-fruited Sauvignon Blanc with a crisp, dry, finely textured palate. Serve with salads and vegetables and Mediterranean fare over the next 2 years. Fruit from the oldest vines, hand-picked and WBP, fermented with 30% by indigenous yeasts in seasoned oak to 13.5% alc. and 2.3 g/L RS, the wine aged 4 months on lees.
