Bright, pale straw-yellow with a pale rim and moderately persistent fine bubbles. This has a soft, fresh nose of lime fruit, exotic florals, honey and herbs, the aromatics full and voluminous. Off-dry to taste, the flavours are up-front and show an array of florals, limes, green apples and honey with muscat-like herb notes. The effervescence is soft, and acidity is gentle, combining with the dosage to present a subtle and attractive sweet and sour aspect. Gentle textures lead to a dry, slightly firm back palate and a lingering finish with lime, honey and florals. This is an accessible, aromatically fruity and soft, all-purpose sparkling wine. Serve chilled as an aperitif, with Asian cuisine and with light fruit desserts over the next 2+ years. Made from 100% Riesling fruit from 20 y.o. vines from the ‘Vynfields' vineyard, carbonated, and on lees 6 months. 12.5% alc. with 21 g/L rs.
