Bright, pale straw-yellow, slightly lighter edged with fine bubbles and persistent bead. The nose is gently full, fill with aromas of stonefruit, baked toffee apple, cream; unfolding subtle toasted almonds and shortbread. Dry-ish to taste, medium-bodied, aromas of peaches and baked toffee apple has a good core and with purity, entwined with slight toastiness, almonds and fresh-baked shortbread. The wine has a good concentration of fruit flavours, generous and approachable. The palate is creamy yet with balanced freshness by integrated acidity and refreshing mousse, lingering onto a long fruity finish. Match with kingfish crudo and crème brûlée over the next 3-5 years. 100% Pinot Noir from Côte de Beaune, second fermentation in the bottle, lees rested in bottle for 18-24 months before disgorgement. 18.5/20 pts (93 pts) Nov 2020 RRP $45
