Lightly hazy, deep ruby-red with a purple hue, lighter on the rim. The nose is full, with a sense of purity; aromas of plums and black cherries interweave fresh dark herbs, violet and spice. Medium-full bodied, plums and black cherries melded with violet, thyme and liquorice, unveiling cinnamon, cloves and creamy barrel details. The mouthfeel possesses a fine grip of tannin extraction and provides a silky frame, lingering with broody herbaceousness. The fruit has concentration and a complex range of flavours, shining with purity. This is an honest Pinot Noir features fruit's purity, broody herbaceous elements and a fine-textured palate. Match with herb-crusted rack of lamb and wild boar over the next 5-7 years. Fruit from Southern Valleys, wild-fermented with 30% whole bunch to 13% alc, aged in 4,500L French oak cuves for 11 months.
