Deep, moderate ruby-red, slightly lighter on edge. This wine has a pure expression of red cherries, raspberries melded with hibiscus flowers, dark herb fragrance, unfolding a hint of flinty mineral, earth and spice. Medium-full bodied, aromas of ripe red cherries, black raspberries entwined with thyme and pine, along with hibiscus flowers and black pepper spice with an earthy, mineral underlay. The mouthfeel is smooth, adorns powdery natural tannin extractions. Herb and spice elements add interest and complexity, draw a lengthy, sustained finish. This is a herbaceous Pinot Noir with balanced ripe fruit, silky palate with a pure expression. Match with Beef Wellington and roasted pigeon over the next 5-7 years. The fruit was sourced from Brookby Road in the Southern Valleys, handpicked, wild fermented with 30% whole bunch to 13% alc, aged in 4,500 French oak cuve for 11 months. Unfined, unfiltered.
