Bright, pale yellow, even colour throughout. The nose is softly vibrant with good energy, greeted with wildflower, spice and clay intertwined with citrus, green tomato, passionfruit and minerals. Medium-bodied, aromas of lemon and lemon peels, green tomato and passionfruit melded with saline, minerals, wildflower and white spice. The wine is complex and concentrated with flavours; saline brings balance and a desire for more. An unctuous mouthfeel and acid tension broaden and lengthen the palate. This Sauvignon Blanc shows purity, tension and texture with a complex range of flavours and a persistent finish. Match with smoked fish and lemongrass pork chop over the next 3-5 years. Fruit from Southern Valleys, fermented naturally and aged for 12-18 months on yeast lees in concrete egg tank and clay amphora. Unfined, unfiltered, vegan friendly.
