Bright, very pale yellow, even colour throughout. The nose is softly full with intense aromas of gooseberries, capsicums interweave elderflower and pine needles, linger with a savoury thread. Medium-bodied, concentrated nuances of gooseberries, limes and capsicums fill the palate, unfolding pine needles, elderflower, along with white spices and savoury lees detail. The fruit is mouth-filling with intensity; savoury elements broaden the palate and provide balance. Rounded mouthfeel supports by mouth-watering acidity and a fine-gravelly texture; lifted white spice lingers to linearity. This is an intricate Sauvignon Blanc with classic flavours enhanced by elegant details and concentration. Match with green-lipped mussels and pork belly bao buns over the next 4-5 years. The fruit was sourced from Awatere and Wairau Valleys, predominantly cool-fermented in stainless steel; a small portion was fermented in concrete egg tank and clay amphora.
