Bright, even straw-yellow colour with light golden hues. This has a full, deeply concentrated bouquet of savoury yellow and green stonefruit aromas softly integrated with citrus fruit and complexing nutty and smoky layers. This unfolds herb and mineral detail with aeration. Medium-full bodied, the palate is firmly packed with flavours of savoury and well-ripened nectarines and greengages, revealing complexing layers of nuts, smoke and minerals. The mouthfeel is marked by grainy phenolic textures and brisk, near-racy acidity. This has a firm core with granular grip, and plenty of energy that carries to a sustained, spicy stonefruited finish. This is a concentrated, complex-layered oaked Sauvignon Blanc with stonefruits, nuts and smoke, and a dry, crisp, textured palate. Serve with herb-marinated poultry, and white meat dishes over the next 3+ years. Hand-picked fruit from the ‘Dew’ vineyard in the Southern Valleys, WBP and indigenous yeast barrel-fermented in seasoned hogsheads to 14.0% alc. and 3 g/L RS, the wine aged 10 months on lees with batonnage and a small portion undergoing MLF. 400 cases made. 18.0+/20 Feb 2016 RRP $35.00
