Bright straw-yellow colour with light golden hues, pale edged, the bubbles fine and moderately persistent. The bouquet is softly full and voluminous with a core of white and yellow stonefruits, white florals from the Chardonnay, chalky and saline minerals, slowly revealing good bready and yeasty autolysis. Dryish to taste and medium-bodied, the palate features fulsome flavours of white stonefruits, florals and a saline and mineral amalgam that unfolds to show bready autolysis and delicate nutty notes. The mouthfeel possesses some phenolic texture and structure with the effervescence softening the grip. The mouthfeel is fresh, mouthwatering and lively, and carries to a lingering finish of white florals, yeast and nuts. This is a flavoursome, structured method traditionnelle with white stonefruit, saline, mineral and bready autolysis flavours. Serve a an aperitif, with seafood and white meat dishes over the next 2 years. 50% each Chardonnay and Pinot Noir, WBP, fermented and the base wine aged on lees with full MLF, the wine undergoing secondary fermentation in bottle and aged at least 12 months on lees. 12.0% alc. and 10 g/L dosage. 17.0+/20 Dec 2015 RRP $25.00
