The second release of a Cabernet Sauvignon under the ‘William Randell’ tier, the fruit from the ‘Milton Park’ vineyard, Eden Valley, harvested at night and fermented to 14.5% alcthe wine aged 16 months in French oak hogsheads. Very dark, deep, near impenetrable black-red colour with some ruby hues on edge. The nose is intense and firmly packed with aromas of ripe blackcurrant and cassis fruit aromas, beautifully focussed and varietally expressive with a soft richness, revealing nuances of mint and a very fine cedary, oaky line. Full-bodied, rich and concentrated flavours of blackcurrants, blackberries and cassis for a sweet and juicy core that opens in breadth and depth. The mouthfeel has vitality and energy, and flows softly and smoothly guided by fine-gained tannins. The extract, structure and acidity are harmoniously integrated, providing positive underlying drive, carrying the palate to a soft-textured, long finish with cedary detail. This is a rich and concentrated, finely structured Cabernet Sauvignon with smooth flow and harmonious mouthfeel.
