Bright, very pale straw colour with some green hues, near colourless on rim. The nose is elegant in proportion and restrained, showing softly mouthwatering aromas of gooseberry fruit, limes, capsicums and passionfruit harmoniously interwoven, and lifted with gentle fermentation esters. Dry to taste and medium-bodied, the palate features a tight, grainy phenolic texture and structure that lends a chalky-textured mouthfeel and envelops the fruit. Gooseberry, capsicum and passionfruit flavours are aromatically enhanced by youthful esters, and grow in presence through the middle palate and are carried by the textures and racy, cutting acidity to a moderately long finish. Give this dry, textural Sauvignon Blanc another few months to come together. Serve with seafood and Mediterranean fare over the next 2+ years.
