Riesling is the specialty white variety for the Chapman family, the variety a proven performer in the region. Winemaker Belinda Gould had the fruit whole cluster pressed and fermented it with native yeasts to 12.5% alc. and 15 g/L rs. Straw yellow with a light golden hue to the colour, the bouquet is intensely rich and lush with honey and tropical fruits alongside lime notes as well as a little reduction. Off-dry to medium in sweetness level, the palate is still tightly bound and shy. However there is excellent depth of citrus fruits, honey and minerals, all on a soft, fine-textured palate. The soft acidity indicates this will be a wine to drink over the next 4-5 years.
