Bright, even, pale straw-yellow. The nose is gently full, with restrained aromas of lemon curd, stonefruit, apple, interweave oregano, basil and delicate spice. Medium-full bodied, nuances of lemon curd, peaches and apple adorned by oregano and basil, citrus flowers and white spice. Fine-textured phenolics and minerals contribute to the mouthfeel. Lively, lacy acidity lengthens the palate and is finished with a hint of savoury. This is an elegant, detailed Sauvignon Blanc with restrained vibrant fruit and complex barrel elements on a textural and savoury palate. Match with salt cod brandade and pork katsu over the next 3-5 years. Fruit from Northburn, clones 905, 376 and UCD1, three clones were handpicked separately, a portion was destemmed, pressed to tank for cool fermentation with selected yeasts. A portion was whole bunch pressed to barrels and puncheons for indigenous yeast fermentation, and a portion underwent MLF. Both portions were left on full lees for 11 months with occasional lees stirring. 14% alc, 2 g/l RS. 18.5+/20 pts (94 pts) July 2022 RRP $36
