Bright, medium straw-yellow, youthful, even throughout. The nose is gently full with aromas of white floral, chamomile, lemon curd, stonefruit, along with honey and beeswax. The aromatic grows as it aerated, attractive lemon, honey and floral rose in presence. Medium-full bodied, gentle notes of floral, chamomile, jasmine green tea, flows with honey, lemon curd, ripe peaches, along with delicate spices and beeswax. The mouthfeel is creamy with flavours of lemon curd and crème brûlée from the lees work and a little phenolic grip from on skins fermentation. The acidity is calming, smooth flowing, quietly balancing creamy texture, emphasized the honey note and entwined the beeswax character. More flavours unfolded as the wine aerated, fresh herbs, tangerine and pith, added interest. This is a Chardonnay fermented on skins, displaying an intriguing range of fruit flavours, honey and florals on a creamy textured palate. Match with clean flavour Japanese fare over the next 2-3 years. Fermented in open-top fermenter to 11.5% alc, left on lees for approx 6 months. Unfined, unfiltered. 18/20 pts Aug 2020 RRP $39.99
