Dark, deep, black-hued purple-red colour, very youthful in appearance. The bouquet has great presence and depth, unfolding waves of rich, ripe dark plum and Dutch liquorice fruit aromas, along with layers of spices, black pepper and fragrant black perfumes. Cedary, vanilla oak and eucalypt detail emerges with aeration. Medium-full to full bodied, the palate exudes a lush, opulent and soft richness, unfolding endless waves of ripe black plum and liquorice fruit flavours. Spices, black pepper, chocolate, oak vanilla and cedar add interest and detail. The mouthfeel is silky and smooth flowing with very refined flowery tannins, the wine seamless and impressively harmonious. The palate possesses great depth and intensity, the concentrated fruit driving the wine to a very long and sustained finish of black plums and liquorice. This is a superbly smooth and refined Shiraz with layers of plum and liquorice flavours and a silken flow. Match with venison and game meat over the next 12-15+ years. Fruit primarily from the ‘St Andrews’ vineyard with Auburn estate and other southern Clare valley sites, fermented in headless American oak barrels and static fermenters to 14.0% alc., the wine aged 16 months in new AP John and Vicard American oak, and seasoned barrels. 19.5+/20 Aug 2015 RRP $200.00
