Deep ruby-red, light on edge. The nose is full, with power, aromas of blackcurrant, black cherry and plum melded with vanilla, cedar and a hint of meaty nuance. Full-bodied, blackcurrant, red plum and black cherry aromas have a fresh core, enriched by dried herb and tea leaf, alongside cedar, clove and meatiness. The elegant mouthfeel has a fine-grained tannin structure, reflecting dark herb and spice elements; juicy plummy acidity provides a smooth flow and vibrancy. This Merlot Cabernet Franc shows plush fruit, herbaceous details, a lively acid line and a fine-grained framework. Match with braised short ribs and ribeye steak over the next 5-7 years. Whole split berries were cold-soaked for a few days, then fermented in small stainless vessels and concrete eggs with indigenous and selected yeasts and bacteria to 14% alc.
