Pale peach-pink, faintly hazy, even colour throughout. The nose is softly full and attractive, perfumes of sweet floral, vanilla bean, entwined with strawberries, cherries and creamy lees. Medium-light bodied, dry to taste, vibrant aromas of strawberries, cherries and raspberries have a taut core, adorn by cherry blossom, lemonade and creamy meringue, linger with a hint of pepper and vanilla. Mouthwatering acidity supports a crisp and refreshing drive; creamy lees detail provides balance and interest. This is a crisp Blanc de Noir with a hint of pink, showing red fruit, floral and a creamy palate. Match with croque monsieur and kingfish sashimi over the next 2 years. Made with Gamay Noir from Maraekakao, handpicked, lightly pressed, fermented in tank to 13% alc, 4 months on lees and stirred weekly.
