100% Chardonnay fermented to 12.5% alc., with 3 g/L dosage, the wine spending 30 months on lees. Bright, very pale straw-yellow colour, pale on rim, with moderately persistent, but very fine bubbles. The bouquet is very elegant and refined with delicately fresh aromas of aromatic white florals, stonefruit and citrus fruit, interwoven with subtle bread and yeasty notes. This has mouthwatering minerally elements on nose. Dry to taste and light-medium bodied, delicately rich flavours of florals and stonefruits are enhanced by crisp, lacy acidity. The mouthfeel features a soft, frothy, creamy mousse, and the palate follows a very fine-textured line, revealing restrained yeasty autolysis nuances which lead to a crisp, chalky, dry finish. This is a very elegant, refined and crisp Blanc de Blancs Methode with delicate flavours. Serve as an aperitif over the next 3-4 years. 18.0+/20 May 2014 RRP $39.99
