100% Sauvignon Blanc from the ‘E Extension Block’, raisined and 25% botrytis-infected, hand-picked, and fermented over 7 months in French oak and tank to 10.5% alc. and 220 g/L RS, TA 8.5 g/L and pH 3.6. Full, deep, light orange-gold colour with good depth. The bouquet is powerful and bold with tightly packed aromas of penetrating citrus fruits, showing tangerines, oranges and lime, with melons and green stonefruits, herb and lime marmalade notes lifted by a little volatility. Honey and talc botrytis complexities unfold in the glass. Very sweet to taste and light-medium bodied, succulently luscious and nectar-like flavours of tropical fruits, lime marmalade and honey are layered with crystallised citrus fruits, toffee, green stonefruits and herbal detail, forming a firmly concentrated, but rounded core. This has unctuousness and opulence, and the sweetness is balanced by fresh, lively, lacy acidity and cut. The mouthfeel is smooth and decadent, but flows with underlying energy carrying through to a soft, unctuous finish of tropical fruits, lime and honey. This is a well-concentrated, rich and opulent Sauvignon Blanc dessert wine with nectar-like unctuousness. Serve with fruit and baked desserts, or instead of a liqueur over the next 4-5 years.
