70% Corvina, 20% Rondinella and 10% other native varieties from vines averaging 19 y.o., fermented with 8 days skin contact, then re-fermented on Amarone marc for a further 9 days, to 13.5% alc. and 4.1 g/L RS, the wine aged 12 months in 20 hl oak barrels. Full, deep, purple-hued ruby-red colour. This has a deep and intensely packed bouquet of ripe black cherry, plum, mineral and earthy chocolate aromas that unfold in layers. Medium-full bodied, densely concentrated and fulsome flavours of ripe plums, liquorice spicy cherries and chocolate show with weight, succulence and lusciousness. The fruit richness is countered by fine-grained tannin extraction at the core with a good line of acidity underlying the palate. The alcohol and extraction grows and the grip extends to the long, lively finish featuring savoury chocolate and spicy cherry notes. This is a full, softly concentrated and rich ‘Ripasso’ Valpolicella with plenty of underlying structure.
