Bright, even, medium yellow-gold. The bubbles are fine and persistent. The nose is softly full, with yellow stonefruit, citrus, baked apple, pastry and yeasty autolysis. Medium-full bodied, aromas of apricot, lemon and grapefruit and citrus peels melded with pastry and cream. Bright acid attacks a citrus and apple peel mouthfeel, enlivens and lengthens the finish; custard Danish and roasted cashew linger on the finish. This Methode Traditionnelle is complex with a strong citrus core, stonefruit and pastry details and an acid precision. Match with pistachio-crusted salmon and grilled tiger prawns over the next 3 years. Made from Chardonnay grown in Ormond Valley, handpicked, whole bunch pressed, second fermentation in bottle and aged for 14 years, disgorged late 2022 and 2023, resealed under crown cap, 10 g/l dosage. 18.5/20 pts (93 pts) Feb 2023 RRP $25
