Bright, very pale straw colour with slight green hues, lighter edged. The nose is very tightly bound with intense, finely expressed cool-spectrum fruit aromas of cut grass, nettles, herbs and green capsicums, along with thirst-quenching wet-stone minerals. Dry to taste and medium-bodied, the palate is slender in presentation with a refined and concentrated core of lively and vibrant, piquant fruit flavours of green stonefruits, nettles, cut grass and fresh herbs. The fruit is underlined by very fine textures and enlivened by brisk acidity which carries the wine to a long, dry, mouthwatering finish. This is an elegant and slender, concentrated Sauvignon Blanc with vibrant and lively cool-spectrum flavours. Serve with seafood, salads and vegetables and Mediterranean fare over the next 2 years.
