Bright, pale yellow with a salmon hue, slightly lighter on edge. Bubbles are fine and persistent. The nose is elegantly vibrant; aromas of peach and cherry interweave almond and savoury autolysis characters. Full-bodied, richly fragranced on the palate, nuances of peach, nectarine, and cherry form a ripe core, unfolding toast, marzipan, and a creamy linger. The mouthfeel is textured with fine phenolics, and fine mousse elevates the palate. Ripe and juicy acidity carries flavour and freshness to a long, lingering finish. This Brut Metodo Tradicional has succulent fruit with a balanced, ripe acid line and a fine-textured mouthfeel. Match with venison carpaccio and braised short ribs over the next 3-5 years. A blend of 60% Pinot Noir and 40% Chardonnay from Finca Los Árboles in Tunuyán, at 1,250M above sea level, Uco Valley. Made under the Traditional Method, spent 30-36 months on lees, 12.5% alc, 12 g/l RS. 18.5/20 pts (93 pts) May 2022 RRP $44
