Bright, even, pale straw yellow. The nose is fragrant, with aromas of pear, quince, honeysuckle and a touch of spice. Medium-full bodied, dry to taste, aromas of pear and quince, melded with honeysuckle and ginger. The mouthfeel is silky with fine-textured phenolics; balanced, lively acidity binds the pure primary flavours and carries to a crisp finish. The dry Pinot Gris features purity of fruit and a fine-textured palate. Match with pulled pork and burrata over the next 3 years. Handpicked, whole bunch pressed, free run juice was racked into a mix of seasoned oak (33%) for wild fermentation and stainless steel (67%) for fermentation with selected yeasts.
