100% Chardonnay from ‘The Corners’ vineyard, hand-picked, WBP, fermented in old oak and stainless-steel barrels to 12.7% alc., the wine undergoing full MLF and aged on lees 11 months. Following tirage, the wine was aged 4 years on lees and dosage to 4 g/L rs. Bright straw-yellow colour with light golden hues. The bubbles are moderately small and bead persistent. This has a very fine and intense, penetrating bouquet with delicate white florals, bready yeast, and hints of nuts and mineral detail, all growing in concentration in the glass. Dry to taste, the flavours are finely presented and tightly bound, poised between finesse and austerity. Chalky minerals and white stonefruits form a firm amalgam with nuts, bread and a hint of toast at the core. The palate flows smoothly with a creamy mousse, and soft textures and acidity, to a very long, crisp, mouthwatering finish showing bright citrus and floral elements. This is a refined and tightly constructed Blanc de Blancs methode traditionnelle with subtle white fruit and nutty flavours.
