A single vineyard wine, organic and biodynamic fruit from 23 y.o. vines, cool-fermented in stainless-steel to 12.4% alc. and 2.9 g/L RS, the wine undergoing batonnage for 2 months. Brilliant straw-yellow colour with some green hues, pale edged. This has a very fine and tightly bound bouquet with concentrated and pure aromas of herbs, gooseberries, grass and citrus fruits, the nose expressed with real clarity. Dry to taste, pure and focussed fruit flavours of gooseberries, grass and herbs exude excellent vibrancy and freshness. Fine, crisp and lacy acidity underlines the fruit providing cut to the mouthfeel. The palate has energy and tension and is carried to an elegant, lingering finish with bright fruit nuances. This is an elegantly fresh and lively Sauvignon Blanc with excellent fruit clarity. Serve with seafood, poultry and goats cheese over the next 2 years.
