Full, bright straw-yellow colour with light golden hues. The bouquet is tight and concentrated with an aromatic amalgam of green stonefruits, nectarines and herbs, along with a subtle oak infusion that grows, but allows the fruit to feature. Dry to taste and medium-bodied, the flavours of stonefruits, nectarines and herbs are complexed by spicy notes and oak, and build to a deep core. The palate features a fine-textured mouthfeel and line, with fresh underlying acidity providing liveliness, cut and drive. The concentrated flavours carry through to a very long and sustained finish with freshness and a fine textural thread of herbs and spicy oak. This is an elegant, complex, oak-influenced Sauvignon Blanc with fine concentration. Serve with herb-marinated white meat dishes over the next 3 years. Fruit hand-picked on an Earth day, WBP and indigenous yeast fermented in 300 L French oak hogsheads to 13.0% alc. and 3 g/L RS, the wine aged in these barrels, 15% new, the wine undergoing batonnage and 40% MLF. The bouquet is tightly concentrated and slender in proportion with penetrating aromas of spicy oak prevalent over nectarine and greengage fruit notes. Fresh herb and mineral elements unfold. Dry to taste and medium-bodied, this is elegant and sleek, with an intense flavour amalgam of spicy oak, gooseberries and nectarines and fresh herbs. The flavours flow smoothly across the palate, the liveliness enhanced by brisk acidity. Fruit sweetness is balanced by a fine textural thread which carries the flavours to a very long and sustained, dry, granular finish. This is a very tight and youthfully brisk, oak-influenced Sauvignon Blanc with prominent oak spiciness. Some bottle-age will see the fruit unfold to provide balance. Match with herb-marinated roasted seafood and poultry dishes over the next 3+ years. Hand-picked Sauvignon Blanc fruit on an Earth day on the biodynamic calendar, WBP and barrel-fermented to 13.0% alc. and 3 g/L, and aged 10 months in 300 L French hogsheads, 15% new.
