Deep, ruby-red with some transparency, lighter on edge. The nose is soft and fragrant, elegantly presented; the aroma of black cherries and blackberries interweave thyme, sweet vanilla and earth, and spices. Medium-full bodied, The palate is rich; black cherries, blackberries intermixed with raspberries, dark herbs, black pepper, unfolding a hint of dark chocolate. The palate is broad with an earthy tone, enriched by youthful fine-grained, silky tannin. Lively acidity provides freshness to the palate. Quality elements are packed in this wine; a short term ageing will be beneficial to integrating the wine. Match with venison ribs and crispy pork belly over the next 5+ years. Fruit from Fairhall Valley within The Southern Valley, Dijon clone, wild fermented to 13% alc, 10% whole bunch, aged for 10 months in French oak, 15% puncheons, a total of 55% new oak. 18.5/20 pts (93 pts) Jan 2021 RRP $45.90
