Bright, light ruby-red, slightly lighter on the rim. The nose is gentle and delicate, slowly growing with aromas of strawberry, cherry interweave hibiscus, thyme, unfolding dark plums and a hint of earth. Medium-light bodied, aromas of strawberry, cherry lengthen by black pepper, sea salt and hibiscus; thyme and plums unveil with subtle earthiness lend an elegant, sustainable finish. Silky mouthfeel compile of supple, dusty tannin and lacy, mouthwatering acidity, delicately persist on the palate. The wine is refined, light in colour and on the palate, presented with strength and elegance. Match with roasted quail breasts and seared tuna over the next 3-5 years. Dijon clones, handpicked, cold-soaked for 5 days, fermented with 68% whole bunch to 13% alc, aged in French oak for 10 months, 38% new oak. 18.5+/20 pts (94 pts) Aug 2021 RRP $36.90
