Bright, even, pale straw yellow. The bouquet is gently expressed with savoury aromas of citrus, pineapple, lemongrass and wildflowers. Medium-full-bodied, aromas of lemon and pineapple melded with lemongrass, wildflowers and savoury details. The fruit is concentrated, elevated by taut acidity and a textural palate with a fine phenolic grip. Match with salmon tartare and smoked fish brandade over the next 5 years. 100% Sauvignon Blanc, fermented with wild yeasts in 70% concrete Tulipes and 22% old barrels. 8% skin fermented, underwent 100% MLF and left on lees for 6 months.
