Bright, even pale yellow. This has a full, intense bouquet packed with dried floral, hay, Vietnamese mint, citrus, grapefruit zest and spice. Medium-full bodied, lime, grapefruit intertwine savoury lees, dried flower and herb, spicy Vietnamese mint, citrus zest and a honied note on the finish. The mouthfeel is oily and alluring; refined phenolic extraction added texture. Vibrant acidity injects freshness and vitality, lead a long, crisp closing. This Sauvignon+ has a complex bouquet full of vibrancy and energy. Match with goat's cheese ravioli and green-lipped mussels over the next 5 years. A blend of 97% Sauvignon Blanc, 3% Pinot Gris, fermented with natural yeasts in a combination of tank, neutral barrel and clay amphora, 5% fermented on skins for 2-3 weeks, left on lees without SO2 for 3 months, bottled unfined, 13.5% alc.
