Bright straw-yellow with light golden hues, a little lighter on the rim, with a persistent fine bead. The nose is full with deep aromas of yellow stonefruits and florals harmoniously entwined nutty elements and complex bready-yeasty autolysis and a little toastiness. Dry to taste, the palate has a well-concentrated, deep heart of white and yellow stonefruits with subtle floral notes melded harmoniously with complex bread and yeast autolysis and nutty notes. This has a mature wine savouriness that adds to the interest. The mouthfeel is soft and creamy with good mousse, balanced by fine acid cut and a little phenolic-textured dryness. The wine carries to a long, lingering finish of bread, yeast and nutty flavours. This is a soft, creamy Cremant-style Champagne with stonefruit and floral flavours complexed by savoury bread and yeast autolysis and some mature wine toastiness. Serve as an aperitif and with most white meat dishes over the next 3+ years. 100% Chardonnay with a stock base from 2013, but a blend of 10 vintages, in a low pressure Cremant style of 3.5 – 4 atmospheres, fermented to 12.0% alc. and approx. 6.5 g/L dosage, the wine disgorged in March 2017. 18.5+/20 Oct 2017 RRP $100.00
