Bright, pale straw-yellow with light golden hues on the edge, the bead very fine and showing good persistence. The bouquet is very concentrated and tightly constructed with pure aromas of white florals and white stonefruits, expressive of finesse, revealing steely floral, citrus and bready-yeasty elements allied to mineral freshness. Subtle lanolin and saline suggestions emerge in the glass. Dry to taste and medium-bodied, the palate features penetrating, intense flavours of white floral and stonefruits along with minerals. The mouthfeel is softly crisp with the phenolics melded harmoniously with the fine effervescence. Complex and individual flavours of lanolin an Asian white balsamic vinegar from the reserve wine lend depth, concentration and unique flavour detail. Savoury nutty and delicate aldehyde suggestions complete the palate as the wine flows to a long, soft-textured dry and thirst-quenching finish. This is a softly crisp, pure and refined Blanc de Blancs Champagne with individual savoury layers and very fine autolysis, along with saline and mineral detail. Serve as an aperitif, with seafood and Asian cuisine over the next 3-4+ years. 100% Chardonnay, all grand cru, the fruit predominantly from ‘Le Mesnil sur Oger’ the remainder from Oger, Cramant and Avize, including 40% reserve wine from an 18 y.o. solera. Base wine from 2012, leaving the cellars on 13 May 2015, the wine disgorged February 2015. 12.0% alc. and 6-7 g/L dosage. 18.5+/20 Nov 2015 RRP $97.50
