Launched with the 1990 vintage to showcase varietal definition. 100% Cabernet Sauvignon from McLaren Valley, Padthaway, Coonawarra, Wrattonbully and Barossa Valley, fermented to 14.5% alc., the wine aged 12 months in French oak (26% new) and American oak hogsheads (12% new). Very dark black-red with youthful purple hues. This has an elegant, pure and focussed nose of soft, but richly expressed, ripe blackcurrant fruit with cassis liqueur. Initially restrained, the aromatics unfold to reveal dark herbs and sweet mint, black minerals and pencilly, cedary oak nuances. On palate quite a fulsome, near massively packed wine with concentrated sweet, bold and lusciously up-front flavours of blackberry and blackcurrant fruit. Layers of herbs and pencilly oak add detail. The sweet fruit is balanced by fine-grained tannin structure and fresh acidity. This has concentration an linearity, the powdery tannins carrying the wine to a well-structured and textured finish.
