Black red, dark and dense in colour, this has an elegant, youthful bouquet of soft blackcurrants, still tightly bound, pure in expression and with very good intensity. The palate has lovely, densely concentrated flavours of well-ripened blackcurrants, cassis, black olives and notes of dried herbs. The structural profile is one of harmony and balance, supple and fine-grained, but with excellent grip. Soft acidity provides an element of tension, and there is real line and length. Designed to show textbook varietal character, the first vintage of ‘Bin 407' was made in 1990, using high quality Cabernet Sauvignon that became increasingly available. 100% Cabernet Sauvignon from Coonawarra, Robe, Wrattonbully and Padthaway, fermented to 14.5% alc., the wine aged 13 months in 22% new French and 13% new American oak hogsheads, the remainder in seasoned American barrels.
