51% Cabernet Sauvignon and 49% Shiraz, the fruit from Barossa Valley, Coonawarra, Wrattonbully, Robe, McLaren Vale, Padthaway and Adelaide Hills, fermented to 14.5% alc., the wine aged 14 months in 40% new American oak hogsheads. Very full, saturated black-red colour with purple hues. This has an elegantly presented, but very concentrated bouquet with beautifully ripened blackcurrant, spicy cassis and mint-like aromas of Cabernet Sauvignon harmoniously interwoven with ripe black pepper, Asian spices and nuances of liquorice. Medium-full bodied, the palate has real concentration, intensity and density of ripe blackcurranty fruit to the fore. This is rich and sweet and unfolds nuances of liquorice, plums and pepper, with cedary oak melding the flavours. The palate possesses serious extraction, the tannins very refined and provide a dry, textural line, balancing the fruit expression. Soft acidity enhances the tannin grip which carries the Shiraz varietal black pepper and liquorice flavours on a very long-lingering, fine-grained finish. This is a refined and seriously constructed classical ‘Bin 389’ Cabernet/Shiraz blend which is showing the Cabernet Sauvignon component in its youth. Very dark, deep, near impenetrable black-red colour with youthful purple hues. The bouquet exudes richness and exoticism with ripe and intense aromas of black berry and plum fruits, exotic Asian spices, black pepper and layers of cedary, aromatic oak. Medium-full bodied, the palate shows great concentration allied to wonderful finesse. Succulent, ripe black berry fruits and plums flow seamlessly with a near-unctuous mouthfeel, revealing pepper, spices liquorice and chocolate, along with shiny and lifted, spicy new oak. There is real power, fruit extract and plenty of extract, but balance and refinement provides restraint and elegance. The flavours are carried to a very long and lingering finish.
