Very full, near impenetrable black-red colour with purple hues on the rim. The nose is very fine and tightly bound with aromas of dark raspberry and blackberry fruit along with black pepper, spice and liquorice at the core. The aromatics are soft and harmonious, reveal notes of eucalypt with aeration. Medium-full bodied, the fruit flavours of dark raspberries and blackberries are firm in concentration and well-bound, forming a packed heart. Nuances of spice, pepper and liquorice add interest, with eucalyptus notes emerging. The wine has good presence and depth with well-balance tannin extraction and alcohol power driving the palate to a long, solid finish of black fruits. This is a concentrated, firm Shiraz with weight and good structure. It will develop over the next 6-8 years. Match with slow-cooked game meat dishes. 100% Shiraz, from four of the six ‘Paxton’ vineyards, destemmed and fermented to 14.5% alc., the wine aged 12 months in new and seasoned French oak barriques.
