Dark, even, purple-hued ruby-red colour, a little lighter on the edge, youthful in appearance. The nose is well-concentrated with good depth of ripe blackcurrant aromas harmoniously entwined with a layer of eucalypt, and an amalgam of mint, cassis and cedary oak. Medium-full bodied, the palate has a fine-textured core with flavours of ripe blackcurrants and blackberry fruit melded with notes of mint, eucalypt and cedar. The palate has light, grainy tannin extraction providing fine grip and structure, with balanced acidity providing energy and drive. The wine carries to a long, taut finish of blackcurrants, eucalypt and cedar. This is a moderately concentrated Cabernet Sauvignon with a good core of blackcurrant, mint, eucalypt and cedary flavours with fine structure and good drive. Match with roasted lamb and beef over the next 5-6 years. 100% Cabernet Sauvignon, from the ‘Jones’ and ‘Thomas’ blocks, hand-picked and fermented with 20% whole bunches to 14.0% alc., the wine aged 6 months in French oak barriques.
