Dark, deep, ruby-red colour with youthful purple hues, a little lighter on the rim. The nose is firm and intensely concentrated with penetrating and pristine aromas of blackcurrant fruit entwined with dark herbs, blackcurrant leaves, cassis and black minerals. Spicy and nutty oak notes emerge with aeration. Medium-bodied, the palate has intense and deeply concentrated flavours of blackcurrants, fresh herbs and cassis, along with leafy notes unfolding a layering of spicy, exotic oak. The fruit has vitality and is enlivened by soft, lacy acidity lending freshness, energy and tension, and is supported by fine-grained, flowery tannin extraction. This has linearity that carries the wine to a very long and sustained, concentrated finish of blackcurrants, herbs and oak spice. This is a tightly concentrated Cabernet Sauvignon with blackcurrant, herb and spicy oak flavours on a finely extracted palate with brisk acidity. Match with roasted and grilled lamb and beef over the next 5-6+ years. Fruit from the ‘Watercourse’ block, fermented to 13.0% alc., the wine aged 17 months in 20% new French and American oak barriques. 470 cases made. 18.0+/20 Dec 2016 RRP $29.00
