Parnasse Cabernet Sauvignon Pays d’Oc 2012

Cabernet Sauvignon from France - Other
Review Date : 23-Oct-2013
Full, very dark, deep black-hued ruby-red colour with some purple hues. The bouquet is tight and shy, showing a core of black berry fruits and blackcurrants, along with aromas of savoury herb and green olives, all harmoniously entwined. Medium-bodied, the palate has good depth with up-front sweet and juicy flavours of ripe blackberry and boysenberry fruit flavours. The mouthfeel is rounded with the acidity in the background. Fine, grainy tannins underline the fruit and build in firmness and lead to a dry, textured finish with flavours of black olives and currants. This is a ripe and up-front Cabernet Sauvignon with dry textures that build in structure. Match with barbecued and roasted red meats, and casseroles over the next 3-4+ years. 95% Cabernet Sauvignon and 5% Merlot from Beziers, Nimes and the Aude Valley fermented to 13.5% alc. 16.5+/20 Oct 2013 RRP $19.99
