Bright strawberry pink with peach hues and eye-of-the-partridge colour on the rim, the bubbles are very fine and the bead with good persistence. The bouquet is fresh with a firm heart of well-concentrated aromas red berry and berry fruit with pomegranate and a little quince, underlined by fine, light bready-yeasty elements providing nuance and detail. The aromatics show good depth and presence. Dry to taste and medium-bodied, the palate has a soft, rounded heart with good depth od flavour of cherries and strawberries, with florals and quince, unfolding soft bready-yeasty autolytic complexity. The mouthfeel has plenty of presence with soft acidity and creamy effervescence lending a mouthwatering texture. The wine carries to a rounded, gentle finish of red fruits and a little yeast. This is a softly rich and concentrated rosé methode traditionnelle with a rounded core of cherries, strawberries, florals and quince along with light autolysis and a fresh, creamy palate. Serve as an aperitif, with canapés and antipasto over the next 2-3 years. Made from 100% saignee Pinot Noir, 90% clone 5 and 10% Abel clone from the ‘Pinnacles’ vineyard, given limited maceration and fermented with 100% MLF to 13.0% alc. This was triaged on 4 November 2016 and disgorged on 2 May 2018, the wine on lees 17 months. This carries 5 g/L dosage. 18.0/20 Jun 2018 RRP $55.00
