Arguably the best sparkling wine produced in the Wairarapa. Made from 54% Pinot Noir and 46% Chardonnay fermented to 12.5% alc., and possessing 8.0 g/L rs after dosage and 30 months on yeast lees. This is a wine of delicacy and subtlety, and thus ideal as an aperitif. Brilliant straw yellow in colour with golden hues, this has a full, even, broad nose that impresses with its softness, elegant expression of florals, nuts and fine bread elements. Dry to taste, the balance and integrated components result in a seamless, gentle wine with softness allied to freshness. The subtlety of the flavours adds to the harmony.
