Bright, full, even straw-yellow with a gold hue, very persistent and fine bead. The nose is full, elegantly presented, and well-proportioned yellow and white stonefruit aroma, melded with citrus fruit and a hint of jasmine, unveiling integrated creamy, toasted brioche and candied nuts. Medium-full bodied, dry to taste, nuances of yellow peach, nectarine entwined with lemon preserve and zest, followed by subtle toasted brioche and a hint of nutty suggestions. The fruit has concentration and depth, elevated by the creamy, fine mousse, carry a slightly chalky, fine-textured phenolic mouthfeel to a lengthy finish. This is an elegant, fulsome Blanc de Blancs with yellow stonefruit flavour and refined bready-autolysis character on a fine-textured palate. Match with grilled fish and salmon with cream fraiche on brioche over the next 3 years. 100% Chardonnay, 12% alc, 5.5g/l dosage, the wine spent 2 years+ on lees.
