Bright, pale straw-yellow with a hint of gold. The bead is very fine and persistent. This wine has an elegantly presented bouquet, harmonious and gently penetrating refined aromas of peach danish, preserved lemon entwined with yellow floral, brioche and nougat. Medium-bodied, dry to taste, refined and focused aromas of stonefruit, lemon sherbet, preserved lemon and apple, interweaved pastry, floral and subtle almond & pistachio nougat. The mousse is smooth and delicate, and the mouthfeel carries chalky minerals, leaving a fine-textured coating. Brilliant taut acidity has vitality and drive, flows seamlessly with vibrancy, cuts through the buttery, creamy linger, and carries through to a long, vivacious finish. This is an elegantly rich and refined methode traditionelle with vibrant, seamless acidity and vitality, along with harmonious creamy and yeasty autolysis details. Match with roasted guinea fowl and butter-poached crayfish over the next 5+ years. A blend of 80% Chardonnay and 20% Pinot Noir, 12% alc and 3.14g/l dosage, 42 months on lees, disgorged May 2020. 150 bottles produced. 19.5-/20 pts (97 pts) Oct 2021 RRP $270
