Bright, medium yellow-gold. Brilliant fine and persistent bead. The nose is softly full, citrusy aromas at the core, preserved lemon, lemon curd, zest melded with baked apple and a hint of stonefruit; integrated autolysis of raw almonds, biscuit added complexity. Medium-bodied, aromas of baked apple, green apple and citrus have a taut and concentration core, enriched by subtle zest, raw almonds and shortbread, lend a persistent, dry finish. The flavours are harmonious, brighten and lengthen by invigorating acidity. Fine and creamy mousse contributes to a silky mouthfeel. The integrated autolysis characters added balance and complex interest. This is a harmonious non-vintage Methode Traditionnelle with bright citrusy flavours and well-portioned autolysis details. Match with pork cheek croquettes and salted cod brandade over the next 3-4 years. A blend of 60% Chardonnay, 35% Pinot Noir and 5% Pinot Meunier aged on lees for 3 years before disgorgement. 12.5% alc, 4.9 g/l RS. 18.5/20 pts (93 pts) June 2021 RRP $32
