Bright, even, pale lemon. The nose is elegantly soft and composed, with aromas of apple, gooseberry, lime peels, apple blossom and a touch of white spice. Medium-light bodied, aromas of green apple, gooseberry, lime and lime peels form a taut core, and apple blossom adorns and lingers with delicate white spice and a hint of saline. The tight, fresh acid line is fine-textured, carries a silky mouthfeel and good energy to a refreshing and elegant finish. This Sauvignon Blanc is thoughtful, features a focused acid line with vibrant fruit and a fine-textured mouthfeel. Match with white fish ceviche and blue cod over the next 3 years. Fruit from Pisa, own-rooted, planted in 1993, oldest certified organic vines. Whole bunch pressed, fermented in stainless steel to 13.4% alc, 3 g/l RS.
