Bright, pale straw-yellow with a green hue, even colour throughout. The nose is gently full, aromas of baked apple interweave mandarine, lime and a hint of elderflower. Medium-bodied, off-dry to taste, the wine is mouth-filling, baked apple, quince, and lime aromas have a ripe core, subtle spice unfolds, along with honey, apple skins and lime zest linger to a long finish. The wine has an excellent balance of sweet and sour; the salivating, zesty acid line is rounded out by sweetness and emphasises the intensity of flavour. The mouthfeel is smooth-flowing with a chalky phenolic texture, retaining fruit expression on the palate. Match this with bacon-wrapped scallops and fried chicken waffles over the next 6-8 years.
