Full, pale straw-yellow in colour with light golden hues and fine, persistent bubbles, this has a slightly reductive nose, providing a flinty component to the aromas of stoneftuits and light tropical, honied notes. The yeast autolysis is somewhat restrained. Medium-sweet on palate, this has subtle peach and honey flavours, showing with some lusciousness, but well countered by good fresh acidity. The autolysis appears minimal. This will partner spicy Asian cuisine, and match lighter desserts, especially those which are fruit-based. A blend of 40-50% Pinot Noir, 30-40% Pinot Meunier and 10-20% Chardonnay, with 45 g/L dosage.Apr 2011
