Charmat sparkling wine from Le Chat Noir Vignerons. 85% Chardonnay with Chenin Blanc and Mauzac from the Aude Valley, hand-picked and WBP, fermented to 12.0% alc, with aging on lees, avoiding MLF. Bright straw-yellow colour with pale green hues, pale edged. The bead is persistent and moderately fine. This has a fresh, vigorous and intense bouquet of pure white stonefruits, chalk and nuts, entwined with nuances of yeast and aldehyde interest. Off-dry to taste and elegantly proportioned, up-front flavours of sweet stonefruits and citrus fruits are enriched by honeysuckle notes and a creamy mousse and mouthfeel. The flavours recede to delicacy and a dry, softly phenolic-textured line that carries the palate to a clean, light finish with sweetness balanced by fresh acidity. This is a fresh, up-front, elegant, off-dry Blanc de Blancs sparkling. Serve as an aperitif over the next 18 months. 16.5/20 Jun 2014 RRP $24.99
